Fish Stew with Crusty Bread Recipe

Serves 4

 15 minutes to prepare and cook


 500g Fish  (Sea Gold Basa Fillets $10 for $1kg)

 1 Onion Sliced

 1 teaspoon Garlic Paste

 1 Capsicum

 3 Peeled Carrots

 2 Celery Sticks Sliced

 2 Tomatoes Sliced

 2 Cups Fish Stock

 All Purpose Seasoning

 Cracked Pepper

 Fresh Crusty Bread to Serve


Heat a heavy base pan and pour in some olive oil. Cook off your onion and garlic, reduce the heat once the onion is transparent.

Add your sliced carrots, capsicum and celery. Stir through. Add your fish stock.

Toss in the chopped tomato and sprinkle in 3-5 shakes of the seasoning.

Cut up your fish into chunks, and lay the pieces down in the bed of simmering stock and vegetables. Put the lid on and simmer until the vegetables are cooked through and the fish is poached. Taste for seasoning. Season with cracked pepper.

Serve in a bowl and eat with crusty fresh bread.
